SPRING SALAD WITH GRAPEFRUIT AND GINGER VINAIGRETTE

With the weather warming up, I’m craving so many more salads! And that’s exactly what I’ve got today. A fun spring salad that is fresh and light with healthy fruit, and is tossed in the most delicious ginger vinaigrette. It’s easy to make, can be customized to your heart’s content, and is perfect for the warmer weather ahead!

Simple preparation and fresh ingredients make this salad recipe perfect for the season. This spring salad comes together in a jiffy; no need to spend hours in the kitchen. A few quick steps and a couple of your favorite ingredients will wow your own palate much less any spring party guest.

The Perfect Salad for BBQs

What I love about this spring salad is that it uses seasonal produce items. And it can be adapted for whatever season you’re in!

Since we’re approaching summer, I felt like I wanted to give you a simple side salad that could be enjoyed as a main dish, or brought to an outdoor party and enjoyed as a side dish. This truly is a perfect salad for all the backyard BBQs!

And if you see some ingredients in here that you (or your guests) aren’t a fan of, as I said it’s totally customizable. Feel free to play around with it. Try different toppings. Heck, try a different dressing if you want! This salad is for you to enjoy how YOU like it!

Early Spring Salad with Grapefruit and Ginger Vinaigrette

Serves: 4

INGREDIENTS

  • ¼ cup extra-virgin olive oil
  • 1 lemon, juiced
  • 1 tablespoon apple cider vinegar
  • ¼ teaspoon ginger powder
  • ¼ teaspoon sea salt
  • 4 cups arugula (or a spring mix)
  • 1 large or 2 small grapefruits, peeled and sectioned
  • 1 fennel bulb, sliced thinly with a mandoline or sharp knife

INSTRUCTIONS

  1. Place the olive oil, lemon juice, apple cider vinegar, ginger powder, and sea salt in a small bowl and whisk to combine. Set aside.
  2. Place the arugula, grapefruit sections, and fennel slices in a large bowl and toss with the dressing just before serving.

NOTES:

Not a fan of Arugula? Replace the arugula with any spring mix lettuces.

If your grapefruit is particularly large, you may want to slice the sections in half or serve with a knife.

Not a grapefruit fan? Replace your grapefruit with strawberries, blueberries or green apples.

Add sliced almonds or pecans another fun option.

Storage: Keeps for a couple of days separated in the refrigerator–toss fresh with dressing before serving.
